VANKAI ULLI KARAM
INGREDIENTS
- Vankai / Brinjal - 10 nos
- Onions - 11/2 nos
- Redchilli powder - 4 tsp
- Salt - 4 tsp
- Turmeric - 1/4 tsp
- Oil - 3 tbsp
- Tamarind - 1 tsp
PREPARATION
- Wash and cut brinjal length wise in the center so that we can stuff it with ulli karam .
- Cut onions and add salt , redchilli powder and turmeric along with a tsp of tamarind puree .
- Grind the ingredients mentioned above.
- Stuff the onion mix into the brinjals.
- Microwave cook for about 15 min turning them upside down to ensure they are all cooked .
- Heat oil in apan and fry these cooked stuffed brinjals for about 10 min to golden brown.
- Spread the left over onion mix to the brinjal and cook for 5 min.
- Serve hot with rice.
- Preparation time - 30 min , Serves - 4 persons.
- Reduce the chilli and salt quantities as desired .
