VANKAI ULLI KARAM

INGREDIENTS

  • Vankai / Brinjal - 10 nos
  • Onions - 11/2 nos
  • Redchilli powder - 4 tsp
  • Salt - 4 tsp
  • Turmeric - 1/4 tsp
  • Oil - 3 tbsp
  • Tamarind - 1 tsp

PREPARATION

  • Wash and cut brinjal length wise in the center so that we can stuff it with ulli karam .
  • Cut onions and add salt , redchilli powder and turmeric along with a tsp of tamarind puree .
  • Grind the ingredients mentioned above.
  • Stuff the onion mix into the brinjals.
  • Microwave cook for about 15 min turning them upside down to ensure they are all cooked .
  • Heat oil in apan and fry these cooked stuffed brinjals for about 10 min to golden brown.
  • Spread the left over onion mix to the brinjal and cook for 5 min.
  • Serve hot with rice.
  • Preparation time - 30 min , Serves - 4 persons.
  • Reduce the chilli and salt quantities as desired .
