STUFFED BRINJAL CURRY
INGREDIENTS
- Brinjal ( long ) - 4 nos
- Besan - 2 cups
- Oil - 1/2 cup
- Redchilli powder - 11/2 tbsp
- Salt - 1 1/2 tbsp
- Cumin - 1 tbsp
- Turmeric - 1/4 tsp
PREPARATION
- Wash and cut brinjals to finger length pieces length wise in the centre in order to stuff them.
- Fry besan adding salt , rechilli powder , turmeric and cumin with 2 tbsp of oil .
- Once besan gets fried , add little more oil so that besan is not powdery . Mix oil well and stuff in the brinjal pieces.
- Microwave cook for 15 min. If the intensity is more reduce the cooking time. Break up the cooking time and check .
- They will be cooked completely . Heat the remaining oil in a pan and fry these stuffed brinjal pieces to golden brown.
- Any besan stuff left add it to the brinjals now. Cook for 5 - 10 min.
- Once they are ready serve them hot with rice. It would be a delicious combo I guess…
- Preparation time - 35 - 40 min. Serving size - 3 - 4 persons.
