VANKAI CHIKKUDUKAI KURA / BRINJAL INDIAN BEANS CURRY

INGREDIENTS

 

Greenbrinjal - 10 nos

Indian beans frozen - 1 pc

Ginger one finger length piece - 1

Greenchillies - 6 nos

Oil - 1 tbsp

Turmeric - a pinch of it

Salt - 1 1/2 tbsp

Curry leaves - 10 nos

Chanadal - 1 tbsp

Uraddal - 1 tbsp

Mustard - 1 tbsp

Cumin - 1 tbsp

 

PREPARATION

           

  •  Wash and cut green brinjal to fine pieces length wise and add the frozen indian beans to them.
  • Microwave cook for 10 min to cook the brinjal and indian beans soft enough adding a pinch of turmeric  .
  • Heat oil in a pan and put tadka .
  • Then add the cooked brinjal and beans to the tadka and mix well.
  • Grind the ginger with green chillies and salt and add that to the curry .
  • Mix well and cook for 5 min.
  • Cooking time 20 min ,Serves 5 - 6 persons.
  • Reduce quantities depending on the requirement .
